I'm not sure what terminology I need to find this info.

Around some of the larger access doors, including the long one on the drivers side (batteries, storage), and the one behind the spare tire, there is a white rubber(y) seal. Is there a proper term for that?

That seal has ... seen better days. It's rolling away from the coach on most of the corners, and around the rear baggage hatch it is just hanging around being a nuisance. It can't possibly be working properly any more.

What terms should I search for to find a replacement? Do I need to replace the doors entirely? (Not that some of them couldn't use it...)

I'm not sure if the term is gasket but I had the same issue on my Concourse. It was a minor version of what you are describing but I was able to use Clear Gorilla Tape to reattach it where it was pulling away. It pretty much does the trick and it may just be temporary but I find Gorilla tape clear, or black to be mighty powerful. I pushed the gasket into place and then attached the tape forcing the gasket against the metal rim.
I used Gorilla tape in my back yard to tape down a drip line that ran across a patch of concrete walkway about two years ago and it still holds up. That's after many rains and hot hot sun, so maybe this "temporary" fix will hold for awhile.

Here is what I used. Leave it in the sun in a plastic grocery bag before using.

On my 2000 Concourse, this was a good match for what had been around my compartment doors (though it doesn't stick as well as I might like, I dabbed a bit of glue in a few places to make it tighter), it is small 1/4", but for my doors any bigger might have been difficult to fully close:

Thanks, everyone! With some extra words to try, I feel like I'm getting closer!

I'm trying really hard to resist my urge to just rip out the seal and fill the groove with caulking. That would make it a bear to replace the doors and frames if/when I get around to that.

It looks suspiciously like someone has taped down those corners before

I just measured the bit that was falling off completely, and it's about 3/4 inch. I think that's what I'll get and try. Thank you!
